Gongura pachadi recipe, the proper Andhra way.
Gongura is everywhere in the market now, monsoon leaves are the best ones. Two big bunches, leaves only. Dry roast on low flame till they wilt fully and the raw smell goes. Separately roast 1 spoon dhaniyalu, half spoon menthulu (careful, they turn bitter fast), and 8 to 10 dried red chillies. Depends on your courage. Grind everything with salt. No water at all. Popu on top: oil, mustard, 6 garlic cloves smashed. Hot rice, a little ghee, this pachadi. Nothing else needed. Tiny tip: a small piece of jaggery balances it if your gongura is extra sour. #gongura #andhrapachadi
